They will explore the hidden world of soil microorganisms to emphasise their essential role in food production. They imagine a harmonious symbiosis between humans
and archaea, actinomycetes, algae, protozoa, bacteria by responding with the confident ritual of eating together. In dialogue with participants, HakkaMoon questions the Western food model through stories and dishes – the conventional agricultural structure of massive monocultures, pesticides and ever-deteriorating soil health – and contrasts it with other models. All ingredients are locally sourced and used in a circular process.
